Yoshi uses his recipe from 2020 for this vintage, blending 70% Pinot Noir grapes with 30% Pinot Gris grapes. We have a particular relationship with the HERTZ estate in Eguisheim, Alsace where the grapes are grown using organic and biodynamic agricultural practices.
Although this wine is made in the Jura, the 2 week maceration with both varietals (both 30% destemmed) reveals the Alsatian taste, thanks to Yoshi’s touch.
